-Baked Halibut with Lemon Caper Sauce-

Ingredients:

  • 4 each Halibut fillets, 6oz

  • 2 Tablespoons Capers

  • 1 Tablespoon grated lemon zest

  • 1/2 cup grated parmesan cheese

  • 4 Tablespoons butter, room temp

  • Freshly ground pepper parchment paper (optional)

What to do:

1. Preheat the oven to 400F. 2. Line a baking dish with parchment paper and place the fish on top of the paper. 3. Combine the capers, lemon zest, parmesan, fresh ground pepper, and butter in a small bowl. Stir well to combine. 4. Spread the butter mixture over each fillet. 5. Roast uncovered for 15-20 minutes or until the top of the fish is golden and the fish is cooked through. It will look opaque and will flake easily with a fork. 6. Serve with roasted vegetables and/or your favorite rice dish.

Baked Halibut with Capers. Made this recipe tonight with Alaskan halibut That I ordered this month, so fresh. It Was so easy! Came out perfect at 18 minutes in the oven. Served green salad , with a wild rice mixture and sliced boiled carrots with butter and some parsley. Dinner was divine! This recipe is a keeper.
